Oliváki
What makes Small Olive Company different?
Every bottle of Oliváki is the result of hundreds of thoughtful decisions made to protect its flavour, freshness and natural goodness. From harvesting early and cold extracting within hours to sourcing from a single certified organic family estate, every detail is carefully considered to create an exceptional extra virgin olive oil.
How should I use my Oliváki?
Oliváki is made to be enjoyed every day. Drizzle it over salads, vegetables, pasta and grilled meats, use it for dipping fresh bread, or add it to marinades and dressings. It's also perfect for roasting, baking and everyday cooking.
Is Oliváki organic?
Yes. Oliváki is produced on a single certified organic family estate in southern Greece, where the olives are grown without synthetic pesticides or chemicals.
Why do you harvest the olives early?
Harvesting early means producing less oil, but far better oil. Young green olives create a fresher, more vibrant flavour and naturally contain higher levels of beneficial polyphenols.
Why is Oliváki naturally green?
The vibrant green colour comes from harvesting young olives early in the season. While colour isn't a measure of quality, it reflects the freshness of the olives used to make Oliváki.
How should I store my olive oil?
Store your bottle in a cool, dry place away from direct sunlight and heat. Keep the cap tightly closed to preserve its freshness and flavour.
What is extra virgin olive oil?
Extra virgin olive oil (EVOO) is the highest grade of olive oil. It is made purely by mechanically extracting the oil from fresh olives, without chemicals or excessive heat. To qualify as extra virgin, the oil must meet strict quality standards for acidity, flavor, and aroma. A high-quality EVOO should taste fresh and vibrant, with fruity, bitter, and peppery notes depending on the olives and harvest.
How do I choose a good extra virgin olive oil?
Look for an oil that clearly states where the olives were grown and produced, ideally with a harvest date rather than relying only on a best-before date. Dark glass or protective packaging helps shield the oil from light, while information such as olive variety, estate, harvest method, and polyphenol content can provide further clues about quality and freshness.
Can you cook with extra virgin olive oil?
Absolutely! Extra virgin olive oil is incredibly versatile and can be used for far more than drizzling over salads. Oliváki is perfect for everyday cooking, whether you're roasting vegetables, sautéing ingredients, pan-frying fish or adding depth of flavour to your favourite dishes.
With its rich flavour and versatility, extra virgin olive oil is a kitchen essential. Use it to create simple, delicious meals, from Mediterranean-inspired classics to quick midweek favourites.

What are polyphenols in olive oil?
Polyphenols are naturally occurring plant compounds found in olives and extra virgin olive oil. They act as antioxidants and are associated with many of the qualities that make EVOO such an important part of the Mediterranean diet. They also contribute to the characteristic bitterness and peppery sensation found in fresh, high-quality olive oil.
Why does good olive oil make you cough?
That peppery tickle or occasional cough at the back of your throat can be a sign of fresh, polyphenol-rich extra virgin olive oil. One polyphenol in particular, called oleocanthal, creates a distinctive throat-stinging sensation. The intensity varies between oils, but a noticeable peppery finish is often associated with fresh, high-quality EVOO.
What does early harvest mean?
Early-harvest olive oil is made from olives picked earlier in the season, while they are still green or just beginning to ripen. These olives typically produce less oil, but the oil tends to have a more intense flavor and higher levels of naturally occurring polyphenols. Expect fresher, greener flavors with a distinctive bitterness and peppery finish.
How should olive oil be stored?
Extra virgin olive oil should be kept in a cool, dark place away from direct sunlight, heat, and air. Keep the bottle tightly closed when not in use and avoid storing it next to the stove or in direct sunlight. Once opened, enjoy it regularly rather than saving it for special occasions - olive oil is at its best when it is fresh.
What are Koroneiki olives?
Koroneiki is a small Greek olive variety highly prized for producing exceptional extra virgin olive oil. Despite its small size, it produces intensely aromatic oil known for its fresh, fruity character, balanced bitterness, peppery finish, and naturally high polyphenol content. It is one of Greece's most celebrated olive varieties.
Is filtered or unfiltered olive oil better?
Neither is automatically better, but filtering can help preserve the quality and stability of extra virgin olive oil over time. Unfiltered oil contains tiny particles of olive fruit and moisture, which can give it a cloudy appearance but may also cause the oil to deteriorate more quickly. Filtering removes these particles while retaining the oil's flavor and valuable natural compounds.
How should I use extra virgin olive oil every day?
Think of extra virgin olive oil as an everyday ingredient, not just something for salads. Cook vegetables with it, drizzle it over eggs or avocado, use it in marinades and dressings, finish soups and pasta, pair it with bread, or add it to fish and meat before serving. Using a high-quality EVOO regularly is one of the simplest ways to bring the flavors of the Mediterranean into everyday cooking.
